Our rosè is of the light and crisp style perfect for drinking on a hot summer’s day with its refreshing palate of strawberries and cream and its lovely zing of freshness. Drink a bottle with friends at the park or take it to your friends next BBQ, we are sure everyone will be impressed!!
This rosè comes from a parcel of shiraz on the southern side of the property which we believe is the perfect spot for making our rosè, the reason being that the vines escape some of the hot afternoon sun on this side resulting in the wine showing great complexity and freshness.
Once the fruit is hand harvested it is 100% whole bunch pressed and fermented in stainless steel vats. After fermentation the lees are then stirred to impart the creaminess of the strawberries and cream you see on the palate, the wine is then transferred to tank to mature before being bottled.
The label of this wine depicts the rolling hills and valley on the southern side of the property where this wine comes from, featuring the great Maribyrnong river that runs through the middle of them which is the source of water and vitality on the vineyard.
This wine pairs perfectly with a Salumi board or our lovely marinated salmon!
2017 Field Blend
Our viognier has lovely balance and depth of flavours, aromas of citrus, almond and apricot blossom can be seen to tantalise, while the palate offers a waxy texture featuring flavours of apric and lemon butter while honeysuckle and spices round out the palate with length and charisma.
This block is planted on the northern side of our property which is perfect for soaking up all the afternoon sun, picking is the very crucial for this wine as all of the varieties ripen at differently so we have to be careful to find the right balance of each.
we are also able to keep all our crops low to maintain the highest standard of quality possible (our viognier is of no exception to this). All our fruit is handpicked at the perfect moment of maturity to ensure that the highest quality of wine can be made, the fruit is then transported to our winery on the southern side if the property.
In the winery the grapes are fermented all together in stainless steel vats to help grasp the liveliness of the wine. Then half of the wine is split off to age in old French oak barrels and the other half is left to age in stainless steel vats we do this to add complexity to the wine. After maturation the wine is added back together and bottled.
Viognier pairs perfectly with richer foods including Italian pork sausages, creamy curries or some fresh seafood.
